View Restaurant At Fairmont Jakarta Introduces New Menu


Beef Cheek, Yuzu Kosho Salsa, Broccoli glazed in Tomato & MolassesRenowned for its creativity in delivering unique gastronomical experience to its guests, VIEW Restaurant & Bar at Fairmont Jakarta introduces a series of new menu that reflects the freshness of summer. The new menu gives a fresh take on unique dining that combines the best of locally sourced ingredients, cutting edge cooking technique and state-of-the-art presentation.

VIEW Chef de Cuisine, Hans Christian, brings his signature twist on every menu. The a la carte selection is classified into Pre-VIEW, Full VIEW and Sweet VIEW choices. The Pre-VIEW menu offers a variety of scrumptious appetizer, such as Foie “PB&J”. PB&J is a common American term of Peanut Butter & Jelly. This menu offers a combination of foie mousse, toast, candied nuts and plum that gives unique sweet and savory flavors at the same time.

Meanwhile, his Italian Medley is a tweak of burrata salad, a combination of “Burrata” , tomato confit, pesto and umami puree that gives an ultimate freshness of a dish.

Those who prefer red meat for the starter could choose the Beef Tartare or Pork Belly. The Beef Tartare is complemented with homemade savory dressing, mustard, smoked salt and grapes; while the Pork Belly added with pomegranate, nasturtium, some crackling and green apple ‘sambal’.

Full VIEW, or main course menu offers choices of chicken, fish, and beef. The Poultry & Foie uses the best part of chicken, cooked with shiitake supreme mushroom, apricot and horenzo. The Barramundi uses curry emulsion, glazed Kailan, ginseng leaf and zucchini. Meanwhile, the Beef Cheek is mixed with Yuzu Kosho salsa, glazed broccoli and burnt onion; and the Wagyu Striploin is served with bone marrow jus, Brussel sprout and King oyster.

Sweet VIEW menu is offered as desserts where the chefs show its creativity in serving Flavors of Kolak. The traditional dessert of ‘kolak’ is served in a deconstructed way with banana brulee, sweet potato, palm sugar and coconut lime sorbet.

Chocolate lovers will be awed with the Chocolate in Many Ways, serving a variety of chocolate-based desserts with candied lemon, earl grey chocolate and soursop sorbet.

VIEW Restaurant works on modern European cuisine with Asian influence. Its approach is focused on unique and bold flavors without being pretentious.  The team of chefs collaborates with local fishermen and farmers in sourcing the best of locally produced ingredients and therefore elevate what are seasonal and available, thus making the menu very dynamic. Chef Hans also offers his signature tasting courses to experience the variety of his signature dishes.

The tasting set menu ranges from 4-, 6- and 8-course selection. Guests are best advised to spare consuming time from 1.5 to 3 dining hours to get the full experience. Aside from the pre-set courses, guests also have the option to choose an 8- Grand Tasting Course, where the menu will only be determined on the spot to showcase Chef’s creativity and based on the availability of the seasonal ingredients. The Grand Tasting Course is an elegant tasting voyage that reflects the Chef’s perspective, and at the same time inviting guests to feel adventurous to be surprised by his impromptu cooking.

A la carte menu is available with price ranging from IDR 50,000++ to IDR 780,000++ per dish, while the tasting set menu is from IDR 690,000++ to IDR 1,080,000++ per person. Wine or cocktail pairing is also available upon request.
