The Ritz-Carlton Jakarta, Pacific Place together with illycaffè and PT. Bahana Genta Viktory for the first time created an exceptional gastronomical event by presenting the experience of illy coffee paired with their chef’s menu in a creative and unique way at Pacific Restaurant and Lounge on 4th August 2015.
This culinary concept is different from any other dinner, it has been studied to walk the participants through a path of taste, highlighting the features of the different coffees, not only consumed as a beverage like espresso, but also used as an ingredient, blended with your food.
Eduardo Vastolo, illycaffe’s Full Professor and Barista Trainer, was the guide in this extraordinaire experience helping the guests in deciphering and recognizing the bouquet of coffee flavors within the sumptuous five courses meal.
Guests can indulge in the fine dining choices from (Antipasti) Fish Carpaccio, Warm Vanilla-Scented Coffee Oil, Roasted Almonds, Chickpea Veloute, (Antipasti) Coffee Dusted Poached Prawn, Pomegranate Gel, Roasted Sesame Dressing, (Primi) Slow Risotto, Pecorino Cheese, Coffee Powder, Capers, (Secondi) Coffee Marinated Beef Short Ribs, Jalepeno Adobo Sauce, Carrot Flan and (Dolce) illy cube – Chocolate, Hazelenut, Black Olive, Coffee Gel, Mascarpone Ice Cream as a dessert by Chef Sean Macdougall.
