As part of his exclusive four day only culinary ‘road show’ in Jakarta, Japan’s Michelin Star Chef Olivier Oddos hold an exclusive cooking class following his fully-booked lunches and dinners the previous three days.
Olivier collaborated with chef and founder of French restaurant Amuz Gourmet, who hosted him throughout the four days, in the cooking class that took place in the state-of-the-art Modena experience center, last Friday (February 9th 2018).
In the cooking class, Olivier showed eager culinary fans his immaculate style of marrying French Cuisine with Japanese ingredients in a cooking demo of three of his menu: Hokkaido Scallops Sushi & Crab Meat Yuzu Lime, Cider Vinegar Juice & Chioggia Beet, Steamed Barramundi Back, Squid Ink Risotto, Arugula-Ginger Emulsions and Vanilla Creme Brulle, Hibiscus Macerated Excotic Fruits, dan Pistachio Sables & Red Berry Sorbet.
For the squid ink risotto, the participants had to pay extra attention as they were given the chance to do a hands-on cooking in Culinaria’s Modena spacious professional cooking area, complete with multiple stoves, sinks, and preparation area that has not only host beginners but also professional chefs in Modena’s routine classes and workshops.
